Chuẩn bị nguyên liệu. Để lưỡi heo hết mùi hôi thì khi mua về hãy rửa sạch và đem chần qua nồi nước sôi khoảng 2 đến 3 phút, sau đó vớt ra và xả với nước lạnh. Lột bỏ phần da bên ngoài của lưỡi và tiếp tục cho lưỡi heo vào luộc tiếp với vài lát gừng đập dập cho đến khi lưỡi heo chín, cho thêm một chút muối để lưỡi heo được săn và ngon hơn. Sau khi lưỡi heo chín vớt lưỡi heo ra và ngâm vào nước đá lạnh ngay, sau đó cắt lát mỏng.
